100% Coonawarra chardonnay, 30yo vines, near Coonawarra township. 2019 Vintage, free run press tray, double fermented on whole lees, lees stir until tirage. Last ferment in this bottle was three years ago. 2.5 years on tirage before release. Dry style, Zero dosage.

Appearance: Light golden colour with very fine lasting bubbles and bead. Mineral spring.

Aroma: Fresh yellow stone fruits. Loafs of fresh baked bread yeastiness.

Taste and texture: Yellow stone fruits, lasting fresh baked bread mineral effervescence, bottle age complexity.
