Guiborat Prisme.17 Blanc de Blancs

Prisme is a 100% Chardonnay cuvee exclusively from old vine parcels owned by the family, namely Les Bergeries (Cramant, planted in 1984), Le Mont Aigu (Chouilly, planted in 1970 and 1979), and Les Caurés (Chouilly, planted in 1946 and 1988). The emphasis with Prisme is to display the transparent nature that the chalk soils of Cramant and Chouilly lend to these wines. Vinification occurs in 96% stainless steel, with the balance in neutral oak barrels. Following 7 months on lees the wine is assembled and sees a further 44 months on lees in bottle, and 12 months resting in the cellar before release.
